Stuffed Retorta del Casar

This Stuffed Torta del Casar is a feast of flavors, combining the creaminess of the cheese with the juiciness of beef and the freshness of tricolor peppers. An irresistible delight for any occasion!

 

Ingredients

  • 1 Retorta del Casar
  • 100 g ground beef
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/2 yellow bell pepper
  • 1/2 small onion
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: fresh herbs (like parsley or thyme)

Directions

  1. Wash and cut the red, green, and yellow peppers into thin strips.
  2. Peel and slice the onion into julienne strips.
  3. Peel and mince the garlic cloves.
  4. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  5. Add the onion and garlic, and sauté until golden.
  6. Add the ground beef, season with salt and pepper, and cook until browned and fully cooked. Remove the beef from the skillet and set it aside.
  7. In the same skillet, add the remaining tablespoon of olive oil.
  8. Add the peppers and sauté over medium-high heat until they are tender but still crisp. Season with salt and pepper to taste.
  9. Carefully cut off the top of the Torta del Casar as if you were removing a lid.
  10. Use a spoon to scoop out some of the cheese, creating a space for the filling.
  11. Mix the cooked beef with the sautéed peppers.
  12. Stuff the Torta del Casar with this mixture, pressing down lightly to distribute it evenly.
  13. Preheat the oven to 180°C (350°F).
  14. Place the stuffed Torta del Casar on a baking sheet and bake for 5-10 minutes, until the cheese is melted and bubbly.
  15. Serve the stuffed Torta del Casar hot, with crusty bread or a fresh salad.
