Savor Potato Mille-Feuille With Sobrasada

Sobrasada is a traditional cured sausage from the Balearic Islands, especially Mallorca, made from ground pork, paprika, and spices. It has a soft, spreadable texture, unlike most cured meats, and a rich, smoky flavor due to the use of pimentón (Spanish smoked paprika). Sobrasada is typically aged and can be eaten on bread or used in cooking to add depth to dishes. Its vibrant red color and savory, slightly spicy taste make it a beloved ingredient in Spanish cuisine, often enjoyed as part of tapas or incorporated into more elaborate recipes for a unique flavor boost.

This dish combines the softness of potatoes with the intense flavor of sobrasada, creating a unique experience. Perfect as a side dish or a main course. Enjoy!

Ingredients:

4-5 Potatoes 
Sobrasada Iberica
100ml Gourmet Extra virgin Olive Oil 
t-spoon of Apple Cider vinegar
t-spoon Garlic
T-spoon Thyme
T-spoon Rosmary
T-spoon Oregano
t-spoon Garlic
Salt 

Procedure:

Preheat the oven to 350ºF.

First, peel the potatoes and, using a mandoline, slice them into thin rounds.
Next, rinse and drain them well.

In the meantime, in a bowl, mix salt, Apple Cider vinegar, oregano, thyme, garlic, rosemary, Dijon mustard, gourmet Extra Virgin Olive Oil, and parmesan cheese. Then, add the potatoes to the mixture, ensuring that all the slices are evenly coated.

Afterward, grease a muffin tin with gourmet Extra Virgin Olive Oil. Now, stack the potato slices on top of each other to form small towers. Before moving on, sprinkle the top of each tower with parmesan cheese.

Next, cover loosely with foil, and bake for 30 minutes, or until the potatoes are partially cooked.
After this time, remove the aluminum foil and continue baking until the potatoes are tender and golden.

Finally, top each potato tower with a teaspoon of Sobrasada Ibérica and a pinch of salt.
