Additional Information

Iberico cheese is a type of cheese that originates from the Iberian Peninsula, which includes Spain and Portugal. It is a hard cheese made from a blend of cow’s, goat’s, and sheep’s milk, with a predominant portion of sheep’s milk.

The cheese is produced using traditional methods, and the milk is curdled using natural rennet derived from the stomachs of young lambs. The curds are then pressed and aged for several months, during which time the cheese develops a firm texture and a distinctive, nutty flavor.

This cheese comes in a variety of forms, including wheels, blocks, and wedges. It is typically served as a table cheese, either on its own or accompanied by bread, crackers, or fruit. It pairs well with red wines, particularly those with bold, fruity flavors.

The quality of Iberico cheese can vary depending on the type of milk used, the production methods, and the length of aging. The highest quality Iberico cheeses are made using milk from free-range Iberian pigs that feed on acorns, which contributes to the cheese’s unique flavor and aroma. These cheeses are typically labeled as “Iberico de Bellota” and are considered a premium product.

Overall, Iberico cheese is a delicious and versatile cheese that has become increasingly popular in recent years, both in Spain and around the world.
