The Morcilla ʺblackʺ sausage Burgos style is a sausage based on blood of pork and rice typical of Burgos gastronomy. The ingredients mentioned are added onion, lard, salt, pepper, paprika, oregano, and other spices. Oral tradition says that it should be: “bland, greasy and spicy.”

I just received my package with the five packs I ordered. Unfortunately, one of the five packs had a nick in the plastic so the foil bag it was in contained blood. Of the remaining four packs, two were not airtight although I could not find a leak. Two were completely airtight.
In addition to that issue, and what I consider to be more important, the morcilla packs were barely cool as the one small ice pack placed in the foil bag was completely melted. I would recommend using more ice packs if the foil bag continues to be used for shipping for products that must remain cold to preserve the quality of the meat, or use a better quality foil bag as there are great ones available. The two star rating is for the packaging and the state of the morcilla packs themselves. I plan on cooking the pack that had a nick in it today and will add another review for product quality; hoping for a wonderful taste and that the lack of cold preservation did not affect the taste.

Ok, so because I want to be fair, I have returned to write my review regarding the flavor and quality. My mom is from Palencia, just a short drive from Burgos. For years she has talked about the morcillas from Burgos and their delicious flavor. I just made her two morcillas and watched as her face lit up. She said that they were exactly as she remembered, absolutely delicious. I asked if she would want me to buy them again and her response was a resounding, “yes”!!
