Asturian Fabes with Chorizo – Classic Spanish Recipe (Ready in 10 Minutes)

Few dishes represent Spanish comfort food better than a good bowl of Asturian Fabes “beans” with chorizo. This quick and easy recipe combines creamy beans with the bold, smoky flavor of authentic Spanish chorizo — perfect for a hearty lunch or an effortless dinner.

👨‍🍳 Preparation

  1. Sauté the chorizo
    Slice the chorizo into 4–5 cm pieces. Heat a pan with a drizzle of extra virgin olive oil and sauté the chorizo until lightly browned. Remove and set aside.

  2. Build the flavor base
    In the same pan, sauté the whole peeled garlic cloves and almonds until lightly golden. Remove and reserve. Quickly toast the dried pepper for a few seconds on each side.

  3. Blend the sauce
    In a tall container, add the caramelized onion, garlic, almonds, dried pepper, and 150 ml of water. Blend until smooth.

  4. Combine everything
    Add the beans to a pot along with the sautéed chorizo, the blended sauce, and the remaining 50 ml of water. Stir well and adjust salt if needed.

  5. Finish cooking
    Cook over medium heat for 2–3 minutes, allowing the flavors to come together.
