Ingredients:
17.6 oz heavy cream (at least 35% fat), very cold
3.5 oz mascarpone cheese, very cold
4 tablespoons powdered sugar
How to whip the cream with mascarpone:
Use a stand mixer with a whisk attachment (or the butterfly attachment if you're using a Thermomix). Add the heavy cream, mascarpone cheese, and powdered sugar to the bowl. Beat on low speed (around 3.5 out of 10) until the cream is fully whipped. Pay close attention to the change in sound and the texture to avoid over-whipping. Once it's ready, transfer the whipped cream to a piping bag or a bowl, and keep it in the fridge until you need it.
Finally, just cut your roscón in half and fill it with the whipped cream.
Tip: You can also add flavor to the cream, like chocolate, strawberry, or anything you like!
