Dip with Red Sweet Piquillo Peppers

🛒Ingredients:
- Red Sweet Piquillo Peppers
- Sun-dried tomatoes
- Greek yogurt
- Cream cheese
- Mayonnaise
- 1–2 garlic cloves (finely chopped)
- A pinch of dried herbs (oregano, thyme, basil…)
👩🍳 Procedure:
- Slice the piquillo peppers and sun-dried tomatoes into thin strips.
- Pour the juice from the piquillo peppers into a pan and sauté the peppers and sun-dried tomatoes for a few minutes. Once done, let them cool in the fridge.
- In a bowl, mix together the Greek yogurt, cream cheese, and mayonnaise. Add the dried herbs and finely chopped garlic. Stir until well combined.
- Spread the creamy mixture on a plate. Top with the cooled peppers and tomatoes. Serve with dipping chips and drizzle with some of the leftover sautéing juice for extra flavor.
