Cauliflower Pizza and Ham

The funniest way to eat vegetables at home.


For dough (for a pizza of about 25 cm)

  • 300 g of cauliflower
  • 60g green pumpkin cheeks
  • 1 eggs
  • 30g Manchego cheese

To decorate the pizza

  • 12 cherry tomatoes – better on the branch because they look prettier
  • 3 slices Serrano ham
  • 1 tablespoon extra virgin olive oil
  • 1 handful of arugula
  • 10gr grated Manchego cheese
  • a pinch of oregano


Cut the cauliflower into small pieces. We put them in the bowl of a cooking robot or a shredder and crush until we get a couscous. If we don’t have a food processor, we can use a grater. When we have the cauliflower crushed, put it in a cloth and squeeze well to remove all the liquid that releases, We will have to tighten well so that the cauliflower is dry and then the dough is dry and crisp.

Return the cauliflower to the cooking robot bowl along with the cheese, eggs and pumpkin pipes and crush until we have a smooth dough without large pieces. If we don’t have a cooking robot, we can crush the pumpkin pipes in a grinder and hand-join the rest of the ingredients until we have a dough.

Divide the dough in two and place it on a pan suitable for oven or on a baking plate. We formed a pizza of about 25 cm.

In an oven-safe container we put the tomatoes with a little olive oil.

Place the pan and bowl with the cherry tomatoes on a baking sheet and bake at 200 degrees for about 20 minutes until the dough is browned by the edges and the surface is golden brown.
