Marcos Salamanca Shoulders have the D.O. Guijuelo (Certified Origin Guijuelo). Guijuelo is the first D.O. created in Spain on 1986. Guijuelo provide the highest quality standards. Our products have been elaborated from Iberico pigs growing on the large Dehesas where the oaks create an ideal ecosystem to produce the right food for the iberico pigs, the acorn. The Flavor

Glossy and transparent fat. Cherry red lean, intense and streaked with a great aroma, persistent and cured. Intense smell. Texture of fluid and soft fat and juicy lean.
