The pimentón de la vera is a PDO product, they all have to go through a process to be able to be PDO. The pimentón de la Vera, goes through a process which is the result of the grinding of red peppers of the following varieties : Ocales, Jaranda, Jariza, Jeromín, y Bola. It is grown and processed in La Vera, Caceres, Spain. The pimentón de La Vera is a product that has a smoky aroma and flavour because of the process it goes through, the peppers are dried with smoke. The flavour, aroma and color are always the same because of the slow process they use to dehydrate the peppers in the production.
