These ‘baby eels’ are made with surimi, a fish (usually pollack) formed to create the shape of a baby eel. The best part is that they are delicious without the cost of real angulas. Prepared in olive oil with red pepper flakes, best to drain them and pour fresh olive oil over them and heat them up before you serve.
