STIRRED POTATOES WITH IBERICO PORK BELLY (PANCETA)

The stirred potatoes (Patatas revolconas) are a very typical dish from Avila and Salamanca, although they are also often prepared in other towns such as Caceres, their main ingredient is potatoes.

This recipe for revolconas potatoes is very simple to prepare and they are usually eaten as a tapa or as a garnish for many dishes such as fish or meat.

Ingredients:

4 Potatoes
3 garlic cloves, minced
1 bay leaf
8oz Iberico Pork Belly (Panceta)
1/2 tsp. Sweet Paprica de la Vera
1 Tsp Picualia Gourmet Extra Virgin olive Oil
Salt and Pepper to taste

Procedure:

  1. Peel and cut in 4 the potatoes. Put them in a pot and add enough water to cover them. Add the garlics and Bay leaf. Bring to boil at low heat. Stir occasionally. Cook until the potatoes break. Stir with a wooden spoon until potatoes become a mash.
  2. Cut the panceta in small cubes. Slice the garlic. In a pan, with a bit of olive oil, fry untin golden and crispy. Remove from the heat and add 1 table spoon of Paprika. Mix well.
  3. Add all the olive oil from the pan to the mash. Mix well. Season.
