We have selected three of our favorites for this sampler:
Semi-Cured Manchego: It has a distinctive flavor, well-developed but not too strong, creamy with a slight piquancy, and leaves an aftertaste that is characteristic of sheeprsquo;s milk.
Idiazabal: It is aged for a few months and develops a nutty, buttery flavor, eaten fresh, often with quince jam.
Iberico: It has a firm, hard texture with a mild, but distinctive flavor that can range from nutty to fruity.
We recommend serving cheese at room temperature to bring out its full flavor.
