Anchovies appetizer are quite possibly the tastiest, healthiest, quickest and most refreshing appetizer you will make all year
For 2 People – 10 Minutes
- 1 can of anchovies
- 8 cherry tomatoes
- 8 mozzarella pearls
Slice the cherry tomatoes.
Roll an anchovy onto the toothpick.
Fold 4 arugula leaf in half and nestle it up next to the anchovy.
Pierce a mozzarella pearl next to the arugula and finally slide the tomato onto the bottom of the toothpick.
Flat the bottom side of the tomato to be right at the end of the toothpick so it stands up straight.
Place all the finished skewers on a plate or tray. Drizzle lightly with balsamic vinegar and transfer to a platter to serve.
Toothpicks: you can use regular toothpicks but if at all possible look for the longer, decorative skewers
Quantities: also, change the quantities as needed. It’s not a big deal…
